pecan pie bars



I got this recipe from my friend Mary's beautiful baking blog, Delightful Bitefuls. Her blog is loaded not only with amazing "sweet treat" recipes, but also stunning photos of all her creations! Everything I've made from Delightful Bitefuls has lived up to the name, and these pecan pie bars are no exception!

My husband's favourite pie is pecan, and these bars are a perfect short-cut to avoid the hassle of making and rolling out a pie crust. These are the last of my pecans that I brought from home (can't buy them here) and I plan on enjoying every last bite! Oh yes, and sharing.

Pecan Pie Bars

3/4 C. butter, softened
1/2 C. icing sugar
1 1/2 C. flour
3 eggs
1 C. sugar
1 C. light corn syrup
2 T. butter, melted
1 tsp. vanilla
2 C. pecans, coarsely chopped

For crust, beat butter and icing sugar together in a bowl. Slowly beat in flour until mixture is crumbly. Press into the bottom (and slightly up the sides) of a 9x13" baking pan. Bake at 350 for 20 minutes, or until lightly browned.

For filling, beat remaining ingredients, stir in pecans, and pour over crust. Return to oven for 35-40 minutes, or until filling is set.

Let entire pan cool on wire rack before cutting into squares. Refrigerate until ready to serve.
