apple cobbler



Am I the only one who didn't know there was such a difference between apple crisp and apple cobbler? Probably.

Apple cobbler has all the taste of apple pie, and instead of putting a layer of crumbs overtop of the apples (like in a crisp), you pour a layer of batter over them and it all bakes together into a yummy, light, appley cake with a golden top.

Confession: I ate a bowlful before dinner tonight. And another one after.

Apple Cobbler
*adapted from My African Cookbook

4 C. apples, peeled and thinly sliced
1/4 C. sugar
1/2 tsp. cinnamon
1 C. flour
3/4 C. sugar
1 tsp. baking powder
1/4 tsp. salt
1 egg
1/2 C. milk
1/3 C. melted butter

Combine apples with 1/4 C. sugar and the cinnamon. Put into bottom of a greased baking dish (2L).

Sift dry ingredients together.

In a separate bowl, mix egg, milk and butter. Add to dry ingredients and mix until smooth.

Pour batter over apples. Bake at 325 for 50-55 minutes, or until toothpick inserted comes out clean.

Serve with vanilla ice-cream or fresh whipped cream. (Or a whip-it-yourself Dream Whip package like me if you can't get ice-cream or whipped cream. Almost as good though!)

*Optional: top cobbler with chopped walnuts before baking.
