pumpkin loaf

I made this yesterday, using some of my frozen pumpkin puree, and it disappeared before I even had time to think about taking a picture of it! But just imagine a warm, brown, moist, pumpkin flavoured loaf with a hint of cinnamon. Perfect for breakfast, lunch, dinner, dessert, snack, coffee break, etc. Just another yummy way to enjoy pumpkin and the illusion of fall in a place where it is summer all year long!

Pumpkin Loaf

1 1/2 C. flour
1/2 tsp. baking soda
1/2 tsp. salt
1/2 tsp. cinnamon
1 C. sugar
2 eggs
1/2 C. oil
1 C. pumpkin puree

Combine dry ingredients in large bowl. Make a hole in the centre and add remaining ingredients.

Stir until everything is well combined and moist.

Pour into a greased loaf pan. Bake at 350 for approximately 1 hour. Enjoy!

cinnamon banana loaf

The recipe for this banana batter came from "My African Cookbook" - the recipe is for muffins, but I decided to turn it into a loaf...with a touch of cinnamon! The top of the loaf is covered in cinnamon and sugar, making it crispy and delicious!



Even better...a cinnamon/sugar ribbon inside.



Cinnamon Banana Loaf

3 large ripe bananas
3/4 C. sugar
1 egg
1/3 C. melted butter
1 tsp. baking soda
1 tsp. baking powder
1/2 tsp. salt
1 1/2 C. flour

1/4 C. sugar
1 T. cinnamon

Mash bananas, and mix in sugar, egg, and melted butter.

Add the baking soda, baking powder, salt, and flour. Combine.

In a separate bowl, mix the sugar and cinnamon.

Grease a loaf pan. Pour half the batter into the pan, then sprinkle half the cinnamon/sugar mixture. Pour in the remaining batter, and top with the remaining cinnamon mixture.

Bake at 350 for 45 min., or until toothpick inserted comes out clean.

Enjoy for breakfast...lunch...dinner...dessert...snack...tea time...
